Chicken Pad Thai

Ingredients
16 oz chicken breast, cubed
1 tbsp + 1 tbsp soy sauce
1 tsp garlic powder
1 tsp black pepper
1 tbsp ketchup
1 tsp fish sauce
lime
1 tbsp brown sugar
3 tbsp water
100g uncooked rice noodles, cooked according to packaging
1 tsp olive oil
1 tbsp crushed garlic
1 onion
green onion. thinly sliced
2 eggs
20g crushed peanuts
50g bean sprouts
Directions
Toss the chicken in 1 tbsp soy sauce, garlic powder and black pepper until coated. Add oil to a hot pan and cook chicken on medium heat until browned and cooked through. While chicken is cooking, prepare the sauce using the remaining soy sauce, ketchup, fish sauce, juice from half the lime, brown sugar and water. Set aside. Remove chicken from the pan and add in the garlic, white onion and green onions. Cook for a few minutes and then scramble in 2 eggs. When eggs are cooked, add in the cooked rice noodles, sauce, and cooked chicken. Toss until everything is mixed and heated through. Serve with more green onion, lime wedges, bean sprouts and crushed peanuts!
