Slowcooker Lasagna

Ingredients
1 pound turkey Italian sausage, casings removed
1 small onion, diced
28 ounces prepared marinara sauce
15 ounce can diced tomatoes, drained
16 ounces reduced fat cottage cheese
2 cups shredded reduced fat mozzarella
large container fresh baby spinach
lasagna noodles (I use 9ish)
Directions
Brown the sausage and onions on medium-high heat until the meat is cooked and the onions are translucent. Add the marinara and drained diced tomatoes. In a slowcooker, layer the sauce, noodles (break apart to fit), both cheeses, and spinach, using about a third of each for each layer. Repeat until no ingredients remain. Doesn’t need to be perfect, or pretty! Cover and cook on on low for 4 hours.
