Cottage Cheese Alfredo
Ingredients
1 cup skim milk
½ cup cottage cheese
½ cup shredded parmesan
Seasoning (garlic powder, oregano, s+p) to taste
2 tsp corn starch
Pasta (option to use a protein-filled pasta like Chickapea)
Directions
Cook pasta according to directions on package. Blend all sauce ingredients except for corn starch in a blender until completely smooth. Heat slowly in a sauce pan. Add corn starch while heating and whisk in. Continue stirring until sauce is simmering. Add cooked pasta back in and stir to coat. Serve with protein of your choice! Grilled or baked chicken, sautéed prawns, etc. Makes 2 servings.
