Creamy Spinach and Artichoke Stuffed Chicken

Ingredients

1 tbsp olive oil

4 x 8oz chicken breasts

120g frozen spinach

1tbsp crushed garlic

250g light cream cheese

170g artichoke in brine (finely chopped)

1/4 cup shredded parmesan

1/2 cup shredded low-fat mozzarella

s+p to taste

Directions

Butterfly the chicken breasts, making sure to not cut them all the way through. Prepare the stuffing mixture by mixing together remaining ingredients in a bowl. Divide the mixture between each chicken breast, and hold together with toothpicks. Heat oil in a pan on medium heat and cook chicken for 5-7 min on each side. Cover for the last couple minutes to make sure the chicken cooks all the way through. Don’t worry if the mixture melts out of the chicken! It makes a delicious sauce to pour on top:) Serve by itself, or with your choice of carb.
