Salmon Bowl

Ingredients

12 oz salmon, raw and cubed

salmon marinade: (1 tbsp crushed garlic, 1 tsp chilli flakes, 1 tsp paprika, 1 tbsp soy sauce, 20g honey, 1/2 lemon juice)

1 cup cooked rice

1/2 large cucumber, sliced

cucumber salad dressing: (1 tbsp soy sauce, 1/2 tsp crushed garlic, 1 tsp chilli flakes, 1 tsp rice vinegar)

sliced carrot

sliced red onion

1 avocado, sliced

sriracha

Directions

Coat the cubed salmon in the marinade and cook on medium heat until browned and just cooked through. Prepare the cucumber salad by tossing the slices in the dressing. Assemble bowls and drizzle with sriracha! For a less spicy version, you can mix the sriracha with sour cream, mayo or yogurt.
