Stuffed Peppers
Ingredients
8 whole peppers
package ground turkey (454g or 1 lb)
1 cup rice, dry
1 cup salsa
taco seasoning
1 cup reduced-fat mozzarella
Directions
Cut the tups off all the papers and scoop out the seeds. Place the peppers in a glass baking dish and bake at 350 for approx. 30 min. While they are baking, brown the turkey in a large pot, and make the rice separately according to package directs. When the turkey has finished cooking, add taco seasoning to taste and cook for a few more minutes. Add the cooked rice to the meat in the pot with the salsa, and stir to combine well. Remove the peppers and and fill them with the turkey and rice mixture. Sprinkle the cheese evenly on top of the piers. Broil for 2 minutes, or until cheese is just starting to brown.
