Zucchini Boats

Ingredients

1 pack ground chicken (454g)

2 tbsp crushed garlic

oregano, s+p to taste

1 cup pasta sauce

3 medium zucchini

60g shredded low-fat mozzarella (approx 1/2 cup)

45g shredded parmesan (approx 1/3 cup)

 

Directions

Preheat oven to 400. Brown the chicken in a pan, adding the garlic when itโ€™s almost cooked through. When the chicken is cooked, add the pasta sauce and seasoning, and simmer for a few minutes until the sauce thickens. Cut the zucchinis lengthwise and use a spoon to scoop out the middles to create a trough for the chicken mixture. Divide the chicken mixture among the zucchinis and sprinkle the 2 cheeses along the tops. Cover with aluminum foil and bake covered for 35 minutes. Makes 2 servings (3 boats each!)
